Why do we use heritage flour?

Our flours are made from the type of nutritionally robust whole wheat that was used prior to the 1950s when hybridization and widespread use of chemical sprays and fertilizers became common.  These superior flours aren't just for those who experience problems with gluten.  Many people favor heritage wheat because it truly tastes like wheat and results in delicious pastries, breads, popovers, and pizzas with wonderful flavors and textures.
